Chinese Fried Rice Recipe - Restaurant Style Vegetable Fried Rice Recipe fried rice is a most sought after Indian street food that also find its pride position in most restaurants.
This vegetable fried rice recipe is a very methodical one with attention given to all small details. Unlike my many recipes, this veg fried recipe uses sauce,vinegar etc but I have avoided ajinomoto. It is much recommended to use sesame oil in any indo chinese recipe to get the authentic taste and flavor, if you do not have sesame oil try using olive oil,refined oil or sunflower oil does not work well with these fusion recipes.
Next point for perfect vegetable fried rice is to use thoroughly used cooked and cooled rice. Hot and fresh rice is not very good for this veg fried rice recipe, you can even refrigerate the cooked rice for few hours, hot rice just turns mushy and spoils the whole recipe. Selection of veggies also play an important role here,use freshest tender veggies as we are going to cook these veggies for a very short time in high flame. You can use veggies like Chinese cabbage, celery etc if you can source else just use cabbage, beans, carrot and capsicum. Cabbage is a must as it adds a nice crunch and taste.
Equal amounts of rice and mixed veggies is the thumb rule, that is if you use 1 cup of cooked rice, use 1 cup of very finely chopped mixed veggies. * 2-3 cups Cooked & Cooled rice
* 1 cup sliced Capsicum
* 1 cup Carrot , cut into long thin strips
* 1 cup French beans
* 1 large Onions finely chopped
* 2 tsp Red chilli sauce
* 1 tsp White vinegar
* Spring onions with greens finely chopped 2 stalks
* 2 Cup Shredded Cabbage
* 1 tsp Black pepper Powder
* 2 tsp Soy sauce
* 2-3 tsp Oil
* Garlic finely chopped 5-6 cloves
* Salt to taste
